A340 Cruise Problem

I have attempted to fly long flights on the PSS A343 several times, and I always run into a problem somewhere in the cruise portion of the flight. I'll crank the simulation rate to 4x once at cruise altitude to pass the time faster, but this always crashes the aircraft. When it has to make a small heading/course adjustment, it banks out of control, eventually going sideways. It then stalls out, falls several thousand feet, and Alpha Floor engages. Even upon returning the simulation rate to normal, the A340 still remains stuck in this spin and eventually crashes. How do I prevent this from happening?
