I've lost my contrails and notice it only reads -7C ambient on the Gage at 30000 ft. Is there a setting that I can adjust?

Yes, check your aircraft.cfg for the following line: "max_contrail_temperature = -30 //Temperature (deg C) below which contrails may appear" (taken from the default B737).Jim

Rather than change the contrails setting, you should perhaps look at why you are getting such a high temperature. Are you using a weather addon?
