I now have a digital Triple Head 2 Go working three 24" monitors. I'm using a single NVidia 560Ti. Maximum resolution is problematic. How does one configure two video cards to drive three monitors? Is this done with or without SLI? Can this be done to display a seemless three monitor wide view? Will this increase or decrease framerates? What are the advantages & disadvantages of a change?

I realize that FSX is CPU dependant but I am wondering what framerate difference there is between the digital TH2Go and the NVidia SLI multi monitor setup if any.

I would avoid using SLI. I tested my GTX 590 in SLI using both GPU's, and with one GPU disabled, and suffered about a 25% FPS drop running the same resolution with SLI enabled. A single GPU solution is definitely the way to go, particularly a single GPU with lots of VRAM to handle the higher resolutions of 3 monitors. I would recommend EVGA's GTX 680 w/ 4GB VRAM, or using your TH2GO with a GTX 580 with 3GB of VRAM. If the price of an additional 560Ti is all that's in your budget, I'd just skip it, as it will probably lower your FPS, not improve them.
