in the md11 you select the amount of fuel and you can wacth the tanks being filled on the fuel page. Fill times are realistic, and pretty neat to watch.

Yeah, it's not a big deal at all but as mentioned a nice touch to add to immersion. It normally takes about 25/30 mins to preflight the MD11 on a long haul so it's nice to have the fuel loading running in the background while you work away.
