Stay with the fast video card, you won't regret it. I have the same one, overclocks *massively* to 1.3GHz GPU/7GHz RAM. Granted, that's on water but even on air I could hit almost the same speed. Go with the largest SSD you can afford also, you won't regret it when you see FSX and all your add-ons loading in seconds instead of minutes. Also, you'll want faster RAM, the faster, the better. I went with the fastest RAM I could find, G.Skill Trident X 2800. Most Ivy Bridge chips can't actually run RAM at this speed, but you can get close and if you have to bump clockspeed down a notch or two you'll be able to tighten up timings tremendously which will still give you fantastic performance.
