I really liked using the keyboard to change display settings. Also, I know METARs can be used via FSMetar with FSUIPC, but can they (or TAF files) be read natively by FS2004 without FSUIPC? If so, how?

No! While the default weather downloads use the same data, it is compacted to speed the download. At times, downloading METAR data from the government sites is very slow. You need to use a third-party program to download, read, convert and transfer the data to the flight simulator.W. Sieffert
