How to know what approach chart to use?

Want to land the Concorde at this airport on runway 35L, there are like 6 different charts, which is the right one?

Take the name of the last 'waypoint' and find it on which ever chart its on. Then use that chart. It may well be wrong, but its the way I do it.

To make it simple and without getting into a full IFR briefing (which would be required for a good understanding of this choice), you need to choose the approach corresponding to (1) your aircraft instrument equipment (NDB, ILS, DME, VOR, RNAV or a combination of the same for example ILS/DME) and (2) the approach in use (visual, ILS, RNAV, etc) given by ATC assuming you use it.

 

In RW, your flight plan indicates the radio equipment of your aircraft so ATC will give you an approach that you can perform, for example should your aircraft be equipped with an ADF only, they will grant you a non-precision approach, or if you have a VOR, they will ask you to make a VOR or VOR/DME (if you have DME) approach, generally - but not necessarily - if the weather warrants it, whatever will correspond to the highest level of precision allowed by your radio equipment, ILS III being the most precise types of approaches when the visibility is low.

 

Coming back to your query, the Concorde is evidently fully equipped with all those radio instruments, it is your choice to select the approach plate you feel more comfortable with and corresponding with the approach in use for runway 35L. If ILS is in use then I suggest ILS X 35L or ILS Z 35L.
