Airbus Autothrust

I'm more of a Boeing man but seem to have recently been interested in Airbus a bit. I know the Boeing 737-300/400/500 and 600/700/800/900 series inside and out. As well as the 757-200/300. I know its a lot different, but I didn't think it was going to be VERY different. Anyways,  I am having trouble engaging the SPEED HOLD on the FCU after takeoff as well as the altitude hold. On the ground I set the altitude ATC assigned me, and on the runway I set on the Autothrottle. I set TOGA and then proceed to climb out of 1500 before attempting to set the SPEED hold but all I see is the speed drop.

I set the speed to 210 knots, but it drops from 160 to 140 to 120 then A. FLOOR comes on. Please help!!
