Dovetail purchased the Microsoft product
Valve, Steam care of product distribution, to the point things seem clear, appear.
  I have not seen an official forum to take care of some bugs.
One of the problems we can not say if it's a bug or a normal thing, the fact FSX SE does not work with Steam offline, like other Steam games, the installer backup does not work ...
Anyone know the way to reach Dovetail or Steam for support, or is it a matter of luck?

Steam is just the distribution channel so offer no support for games.

 

There are forums on Steam for fsxse. Look on the left menu on the fsxse page on steam.

 

There have been a few responses to bug reports there from dtg and indications that at least some of the current issues are being looked at. There is also an email for dtg support.

As previously stated steam is just a publisher so support would be from dovetail.

 

About your steam backup issue, support would be from steam. However Steam never (and clearly in their FAQ) claimed that their WYSIWYG back-up system works with every game, so support query would be a waste of time.

There is a full proof way to backup steam games anyway and it works with FSXSE
