This wouldn't be as big of an issue, if one could just hold off on updating FSX-SE until it is.

You always have the option of disabling automatic updates of Games via the Steam control panel

Unfortunately I don't see this option available for the current (non-Beta) version of FSX:SE.  Only option I see is only update game at start of game.

furthermore the comments also suggest its not possible

 

"All this setting seems to do prevent Steam from checking for updates for Mass effect when Steam is started. This does not prevent Steam from installing an update that been release before Mass Effect is actually launched. It is my understanding that game updates and steam client updates are both required to be installed. You can choose when they are installed of course, unless you are trying to play a game, and an update has been released since the last time you launched Steam"

Actually that's from an old version of Steam, and it actually didn't prevent updates as it said. The new version corrects the verbiage to what it actually does. "Only update this game. when I launch it", it won't update if you just login to Steam, but if you try to launch FSX-SE it will. That said, there is another way that's suppose to prevent updates, which I don't know if it will work or not, but I'm going to try it. Set updates to the above option. Then use the add a non steam game to your library linking to FSX-SE. After the update goes live, use only that link to launch FSX-SE (You can create a desktop shortcut as well) Supposedly  that will prevent the update, since it's defined as a Non Steam game! As I said, I don't know if this actually works! I got my fingers crossed, so we'll see!  Note at any time you launch with the official link the update will install, and it will be too late.
