Does uninstall pmdg 747X impact to the NGX or 777 such as the NAV data or airac ? How to do this correctly ?

Uninstalling the 747X should have no effect the AIRAC cycle you are using. The data for the AIRAC cycle is within folders that have nothing to do with a specific aircraft.
