And im stunned over how realistic the shaking and movement in cockpit look! Does anyone have a good profile for ezdok that recreates the same effects?

Well I don't have ezdok, but with OPUSfsi you have the effect you want to as close as real. Take a look at my video I've made some time ago with A319 :
