Nvidia Shadowplay isn't the best thing to make good videos... But it's "ok".

 

I uploaded it in 4K but I think Youtube still needs its time.

Push Anti Aliasing, Texture Filtering etc. and you will see your card working ;-)

Overclocked my GTX 780 , Prepar 3D ran smoother and higher FPS.

Checked and GPU usage was at 100%.

Sure. If your GPU is at 100% most of the time you will see a benefit.
