As far as I'm aware, there are none of us, blind and visually impaired that is, using MCE. I wonder what all we'll be able to do with it, honestly, but I know one thing we can't do that's critical to any flight is land the bird. We can descend to a certain point I think, but that's about it. I wish the demo had a time limit of days instead of 30 runs of the app. I want to try it, but if I can't land all the way with voice, I.E. my first officer can't assist with it, like they would IRL, I don't see the point. I'll try it, love, want to give FS++ money and get frustrated when I can't touch down.
