A single 21:9 ultrawide (like the Dell U3415W) or a large 30Hz capable 40-55" 4K TV are your best options, IMHO.  Much, much less hassle than setting up bezel corrections and alignment etc on a multi-mon setup.

I concur with the 4K monitor, assuming your PC can drive it. A 21:9 or multi-screen really needs a head tracker unless you're going to use it for the out-of-the-window view only and use a separate instrument panel. Setup and bezel correction is almost zero work unless you're going to use separate windows, in which case it depends on what sim you're going to use (and again, whether your PC is powerful enough to drive three separate windows).

If you aren't going 4K I'd say go multi-screen, as the 21:9 monitors are pretty small in comparison. This presumes you want to run something roughly life-sized if not, you can run a zoomed-out display but it's not as realistic. Consider running your three screens in portrait orientation - this gives a much more natural aspect ratio, which will allow you to run the virtual cockpit without a head tracker if you want and reduce distortion at the edges. I'm currently experimenting with three 32" TVs in this mode and it gives me a 55" picture I can sit two or three feet from with much better clarity than a conventional big TV. It's also about 25% fewer pixels than 4K, so more in range of a modest PC performance-wise.
