How to hurricane hunt?

I've got my P3Dv4 fired up, Active Sky for p3d loaded up with Harvey looming off the coast.  Now what?

First, what's a good plane?  I found that any small planes (piper meridian, etc.) tend to flip over on the runway.  Anyway to stop that?  I've got the old FS-KBT P-3 Orion working in P3Dv4, so that's what I'm trying now, but open to suggestions.

Second, how do you map a flight plan with GPS waypoints in the storm?
