X-Plane11 dedicated PC

Hi
Need some help to build a XP11 PC.
I run P3D-V4.2 as my main Sim PC , i run it with SLI and XP is not support that.
Have a second PC for other apps for the sim that a shall use on both platforms its a Ryzen 1800x with 2X1070 , use it as workstation.

The thing is that i have a lot of Hardware that doing nothing today.
Chassi FractalDesign R6 that i shall use.
GPU: have one Galaxy OC edition 1080TI that i have a NZXT G12 unit with a X61 Aio unit.
Asus 1080 Strix OC edition and 1070 from Gigabyte
PSU: FSP pro 1000W  or Colermaster 900W
SSD: have 2pcs 500gig Intel tink it was p600 or someting not sure M.2
for cpu cooling a Corsair H115
Mems G-Skill 4x8gb 32gb total 3600mhz C15
For system i have Both AMD or Intel
X299 , Z370 or Ryzen
CPU MoBo : Asus Apex z299 and a I7 7920X
second Asus Hero and Ryzen 1800X ( put a 1600X from the drawer in the workstation)
third Asus Z370 Hero and a Intel I7 8086K ( not close to my golden 8700K) 

What combo you XP11 guys prefer and i put it together the combo you like most.
