I was like you not so long ago but I see on YT more and more small GA/bush aircraft with glass gauges  that I  lean toward glass cockpits now.

Nope. This list has been known since quite some time.

The CAP10 VC was already shown in one of the very first published videos.

The DA62 VC was part of the sounds episode.

The DA40 and A320 VCs have been shown as well.

I'm pretty sure that the Cub on floats will have steam gauges.

A steam gauge 172 will be included as well.

We've seen the cockpit view of the A320neo. Didn't look too good at that point in time. Hope they'll improve it.

The info on the screens needs to be improved but the cockpit itself looks rather nice and realistic to me.

What I first noticed was the flap indicator. It somehow looks awkward.

Also the knobs on the MCP look simplified somehow. In general, the quality seems a bit low. I guess it is a work in progress.

Anyhow, I don't expect (trigger warning) study level with default airliners.

I think you could use the soundscape video to confirm, or further confirm more planes.  Like they are doing full sound on the TBM 930.  (I am not the best at recognizing planes, so not sure what others.)  https://www.youtube.com/watch?v=ySEWs6luN7Q&t=343s
