There is a freeware app called Joystick Curves which allows you to customize the control sensitivities much more extensively than the simple in-game slider. You can set all kinds of curves or just reduce the senstivity linearly - or have a combination of both.

Using this app I got rid of all my control sensitivity issues without having to touch the flight_model.cfg files.
