How do I know how much time and distance is remaining in the 747 since the "Prog" page is inoperable?

Have to do some Math calculations.

Is there somewhere I can figure that out?  Not familiar with that process.

A very basic formula would be Time = Distance / Speed.
But you would have to know where You are at the moment you make your calculation, and calculate remaining distance first.
You can use current Lat/Lon  to calculate distance, although I don't know if the MSFS 747 displays current Lat/Lon, but there is also a formula for that. You will need a calculator or a slide ruler if You are an old timer.

Is the legs route data selection working? Probably not😔 but that would give you another indication by looking at your final runway waypoint.
