Joking aside, Vatsim is an online service manned by real humans. Its main weakness, there aren't enough volunteers out there to cover for ATC everywhere, so it's a hit and miss and you certainly can't choose where to fly, but rather fly where those folks bother to turn up for unpaid work.

Its main weakness in my opinion, is that its all American!

I want to fly out of Manchester to Schhiphol ....sorry! Forget that!

I actually find England controlled at most times, The england division is one of the most active ones. Germany too, if you fly over there.

Been flying over France too and  quite friendly  controllers there as well.

There is staffing all over the world. Your best bet is evenings and weekends local time for ATC. Also check out the events at vats.im/events where you will have a guarantee of service during the posted times.
