I think the Sim up 3 broked the A32NX AP

Look at this video. It's like the plane is ignoring the MCDU and just go to a specific heading. Even if all the managed function has been enabled.  This is the latest dev build.

Working fine for me.

But I started from cold and dark, not from the runway.

Only issue i have found with the latest dev is i can only select 1500ft vs. Turn the knob and it goes directly to 1500, no further adjustment can be made, up or down.

And I just flew from KIAD to KORD with zero issues, development branch version.

Try reinstalling it.
