Is there a way to save my graphics settings and not have to reset them every time I start a flight?

your config file is probably set to read-only - untick that.

I am not seeing this at all. I was not on the pre-SU8 beta.  Wonder if the processes related to that beta and the subsequent official SU8 updating cross wired something, such as changing file/folder locations or something like that.
