Ok, so since the major (and some minor) hubs have been mentioned, how about these:

Goose Bay (CYYR)   (don't know of any scenery on this)
Gander (CYQX)  (freeware is available on this one)

Great suggestions. Simaddons is already working on CYQX, I've seen screen shots on his support forum.

I like to use Goose for ferry fuel stops to Europe in light aircraft.

Gander is ... well, historic in a way, as to transatlantic flight.

Another one I forgot was Frobisher Bay aka FroBay aka Iqaluit (CYFB).  I don't know if there's any freeware or payware on that one.  And it is pretty far out of the way.

For my own selfish reasons… please do CYQT, I did my flight training there back in the day, would love to see a good CYQT, it makes for a good flight from Toronto! 

But I understand demand is important for business, but my wish list

Having said that, their Canadian sceneries are not quite at the level of Roman Design, so that would be a very good choice, IMHO. Other interesting options would be Montréal–Mirabel CYMX, Ranking Inlet CYRT, Hay River CYHY, Brandon CYBR, Sioux Lookout CYXL, and Wabush CYWK.

There's a really nice freeware YXX on flightsim.to just in case you were not aware. The author is also planning an update to make it fully native with gltf models and PBR texturing as well in future.

Great discussion, thanks everyone! I will make a list and count all votes and think it over. BTW I'm not limited to my list, I'm open to all suggestions. One comment: I'm OK with creating something that's already available on Simaddons, as I did with CYOW. From what I see, I may be OK with redoing airports that FSXCENERY did as well. I just don't want to clash with any of the well-known top tier developers for obvious reasons.

Please feel free to do anything that FSXCENERY  has done! CYAM is terrible. That said my vote is for CYSB as it is a important hub for northern Ontario, has scheduled regional flights to Toronto and Ottawa and would be a great base for my norther Ontario/Quebec flights. I don't think it has ever been done in any simulator.

CYXT Terrace as Henry said in earlier post. Not too far from Vancouver and Southern Alaska. Flew there quite a few times in FSX.

Since FSimStudios is supposedly working on CYYC, and CYEG might be released by them soon, from this list, I would be most likely to buy CYXX (Abbotsford). So my vote is for CYXX.
