I think everyone will pretty much agree the Comanche is the gold standard for GA.

Black Square TBM, Longitude, and 310 are also right up there for me.  Kodiak and Vision Jet just behind those.

Certainly was waiting for that: Hjet from FlightFX  It is at the top of my list.

If you accept helicopters, the following:

Taog's products, to include his new UH-1H Huey.

Also, there will be major systems/avionics improvements (along with a plethora of other updates) to Cera Simulatons' Mil Mi-17V-5 "Hip" helicopter. The helo is out now (only on Simmarket) with a new version coming in the very near future. Having been involved in testing the new version, I'd put the update on par with the Taog Huey in terms of fidelity and system depth.

Highly recommended if you are into something like the C172. Worth noting that the underlying default C172 seems to be one of the aircraft that gets most love by Asobo because it is often one of the first aircraft that takes advantage of new technologies implemented into the sim.

If you go for the WBSim, also consider getting this to enhance immersion even more:

Interesting you mention too many aircraft to fly.  I feel the same way.  I try to focus on just one, but there are so many excellent choices and the next shiny thing always gets my attention.

 

My go-to favorites …because they’re the highest fidelity in my opinion (GA is all I fly):

* BlackSquare Dukes (Grand Duke)

* BlackSquare TBM 850 (A major update is coming?)

* FlySimWare Lear 35A

* Cows DA42

* FlightFX VisionJet

I appreciate hearing about your favorites, but this is NOT necessarily a ‘favorites’ thread. This is a “highest fidelity, wear and tear, attention to detail” plane thread. For instance, I absolutely can’t stand to fly military planes, but I’ll mention one if there’s a hyperrealistic one available.

The best fidelity for me

A2A Comanche ( I still marvel at how good this AC feels in flight)

Fenix A320 (Dedication to perfection from this team)

PMDG 737 | 777 (A few niggles observed from actual pilots but apart from that no complaints)

Inibuilds A300 (Was a diamond in the rough at first but they have worked on it to the point where its a reliable workhorse Hats off to them for keeping at it.)

 

There are two AC that i'm sure could be included in this list but i don't personally own is the Leonardo Maddog X and Just Flights F28 Professional

 

The two below are missing features important to me or their implementation is not quite as robust as i would like as yet but could very well move to the best list once those updates are made.

Thrustmaster Boeing Yoke + TCA Sidestick + TFRP Rudders

CAS J-3 Cub is the most authentic strictly stick and rudder plane there is. No avionics, just a few gauges. It is my favorite plane for flying bush strips. The low power really requires you to fly it carefully in mountains areas. The downdrafts and updrafts are palpable. It is incredibly inexpensive, has unique features, three variants and is a total blast to fly in VR. Anyone who doesn’t own it, is truly missing out on a sublime experience of the basic forces of flight.  The developer has also been actively working on it since initial release. It is not a plane you purchase for deep systems, avionics or manipulating switches and buttons. That is for the airliners, A2A and Blacksquare.

The SWS RV8 is incredibly close to the real thing, both in systems and flight modeling. I am super impressed.

For me, high fidelity and overall experience aren’t always correlated. 
 

An example of this is the Flysimware Learjet 35, it hasn’t for everything modeled but what is modeled feels right and the aircraft by nature is a challenge.  So it makes the immersion factor very high. 
 

Fenix A320 and iniBuilds A300 are two others that come to mind in recent times for me. 

So you're interested in wear n tear and attention to detail.  What comes to mind:
