Two things , any good specific Max checklist?

In the EFB under options  there is a setting regarding the Probs. Something related to temps .Anyone with knowledge in this regard? Something to be aware of related to derates?

You can use the NG checklist. It's literally the same (done on purpose by Boeing).

Do you mean aspirated vs non-aspirated TAT (total air temp) probes?  Basically, aspirated probes are ventilated in a way that prevents the probe heat being on from affecting the temperature sensed by the probes on the ground (in flight it's not relevant as there's enough airflow through and around them either way.). Non-aspirated probes will display a TAT of +99 on the ground after the probes are heated.  The only real operational difference is, with non-aspirated probes, there is a field in the FMC perf init for current OAT that must be entered.
