I'm referring to control sensitivity on airliners.

I reduce elevator and aileron sensitivity settings in MSFS by ~30%, I think I shouldn't have to.

Why not? It's totally dependant on what kind of hardware you use.

That you say that moving your joystick slightly yanks the A320 all over the sky is a clear indication to me that this is specific to whatever model you use there.

I for example use the TCA Sidestick and don't see what you are seeing with a completely linear curve.
