Baron 58 flight dynamics (somewhat long)

For the past couple of months I have been flying the default FS2K2 Baron 58. I recently added a second computer to use WidevieW (which, BTW, is a blast :D ). This required moving my CH yoke and pedals to the new system. On the old system, I had used the CH control manager to calibrate the CH equipment. With the new system, I couldn't get the control manager to work, so I just let Win XP detect the pedals, and then used FSUIPC to calibrate. I noticed two things right off the bat. First, taxi mode is immensely improved. Before, the slightest touch of the pedals could cause very severe directional drifts. In addition, I had a terrible time controlling taxi speed (always too fast). Both of these problems have now gone away, and the plane seems much more responsive to control changes (particularly IAS). The other change I now notice is that the aircraft always tilts to the left in level flight, requiring constant aileron correction. So here is my question - is this normal in the BCB58 (due perhaps to prop torque or wash)? One other question. I understand that with variable pitch props, you have to use some restraint in the power down on descent/approach in real-life aircraft, less you blow out your engine. Can someone either briefly explain some of the basic rules, or point me in the right direction?Thank you.
