Hello, I'm new to the AVSIM forum but want to ask a question of you well informed and savvy aviators. I

yep, one recommendation: get ActiveSky ASAP. It will change your virtual weather concept at first glance. As for other aircraft, the only ones I know of that are close to the level of realism imposed by PMDG are the Level-D 767 and the A320 series from PSS.
