You are asking many -very broad- questions which seem to suggest that you didn't yet check out the various existing resources to get started with FlightGear (i.e. FAQ, documentation, wiki, mailing list & forum archives?). When you do search the mailing list archives, you'll find that FlightGear has previously been successfully used to drive UAVs/UAV projects, likewise it's previously been used together with MatLab. In fact, you might even realize that some of the key people behind the project are very much into this whole UAV thing, for example the project coordinator himself posts regular updates about his own UAV efforts to the FG DEVEL mailing list.So, your best bet would probably be to get in touch with people who have previously used FlightGear together with UAVs.So, you should probably ask yourself whether there might be a more appropriate place to discuss such issues, given that these forums are neither officially supported by the FlightGear developers, nor particularly well frequented even by "normal" users.
