My fuel keeps refilling at random times during a flight, doesn't matter if I'm on the ground or not. I have FSpax installed but I'm pretty sure it's not directly causing the problem as I've tried flights without using it.

Check realism settings, unlimited fuel unchecked?

Yes, it's off. And infinite fuel does not physically add fuel to your tanks, it merely maintains engines running after you run out. I think.
