Once I have input my flight plan in the FMC and activated it, is there any way I can scroll through the waypoints on the flight plan on the MFD to make sure everything looks fine?

Put the mfd in plan mode. On the CDU LEGS page there is now a "step" button (6RSK afaik) to move the map one waypoint at a time
