GPUs for 3 x projector setup - one or two?

Hi all.
I am setting up a visual for my homecockpit, using 3 projectors. Now my question is what would be the best setup. I have read alot on this forum, and it looks like that using 2 x RTX2080TI running in SLI actually is a hassle and buggy and not giving very much extra performance. But I would think that is for use on a single monitor, or? Would it give any sense to use 2 x RTX2080TI not in SLI but just connect one view projector and the "mainmonitor" to one, and two views to the second card? 

And when choosing GPUs, what should I be aware of? There are alot of brands that produce the RTX2080ti, some cheaper than others - but what are the differences? Any suggestions on a specific model?
