The cards you selected are really close in specifications. Without searching the net for some reviews with benchmarks it's hard to say. On Nvidia's web site they are virtually identical with the exception of memory bandwidth. The Ultra has a slighly higher memory bandwidth so I would say it may have a slight edge. If there is a big cost difference I would say go with the least expensive solution. One thing you don't mention is the manufacturers of the cards, that can make a difference in quality and reliability. If you could give more information that would help.Scott.
