737 NG on a Short Layover

When the 737 is on an intermediate short layover between cities to refuel, drop off and reboard, how much of the plane is shut down? I know the engines are shut down and the APU or ground power is used, but are the overhead and major systems left on to make for a quicker departure to the final stop? Thanks. Tom
