Read the documentation on changes to visibility, clouds, and pressure transitions. It tells what values will give what results. Changing certain values will increase the transition rate or decrease them. Spend some time reading the docs and then experimenting. The combo of FSMeteo and FSUIPC should allow you to get "fairly gradual" changes. They won't be exactly realistic, but that is a problem with FS that these 2 programs cannot overcome.
