Quad-cores are so cheap now and overclock nearly as well as dual-cores you may as well go that route. If you have a MicroCenter nearby I suggest you pay them a visit. I recently purchased a Core 2 Quad 9550 (stock 2.83GHz, 12MB L2, 1333MHz FSB) chip for only $169, a Gigabyte P45-UD3L motherboard for $99, and an OCZ Vendetta 2 cooler with an additional high-RPM Scythe 120MM fan for only $41 ($29 + $12). With these parts I've overclocked this chip to 4GHz (8.5x471) and it took all of 30 seconds spent over 2 trips to the BIOS and an hour of testing with OCCT Linpack. The additional components needed to complete your build could easily be obtained with the remainder of the $600 you've mentioned, giving you a system likely to last just that much longer than the dual-core build you've mentioned.
