I have a 5850 running 3 screens and would like to run 2 more for instruments. My question is can I run can I run a 5850 and a 6970 without crossfire and get this result.

You should be able to. I was running a gtx 480 and a 5870 together at one time. I think the thing to remember that is that the workload pretty much all goes to the main card though, the second card will more or less just be like a big bulky adaptor and won't actually pull any weight. That means you might have a lot of strain on that one card = loss of frames. My frame rates drop about 10 when I try and line up two internal VC views side by side.
