Notebook with touchscreen for FMC?

I am considering buying a used notebook or two (with touchscreens) to have FMC and possibly an overhead panel on separate screens. All this via network. This might be easier than adding a second graphics card to a 32bit system that is already running two monitors (instrument panel in 2D and VC).

 

There are a lot of notebooks around, and I am wondering about the necessary specs. Would a Pentium III with 900 MHz be enough for only the FMC?

 

It's still all FS9.
