Outside View Range in FSX

I've seen a few photos of the view looking out of the cockpit from full simulators.  From what I've seen they must have some sort of projector system that wraps around the cockpit - which is really cool if you can afford it.  But whether you have one monitor, multiple monitors or a wrap around projector can you control how much (to the left or right the view) you can see in FSX?  I'm asking because it appears that the view I've seen in these photos looks further to the side that I can see w/ my set-up.  Note - I understand that there is software that allows you to look around the cockpit and that's not what I'm asking about - hope this makes sense.
