Multi-Monitor setup, the wrong way?

Hi,

Just wondering why most people who use a multi monitor setup, normally have a screen dead centre, then 2 screens at the side? The 737 cockpit for example, has a design similar to this..

I would have thought 2x 29" ultrawide slightly angled in for the front and then 2x 24" monitors for the side would look far more realistic?

Also, if i was to do that, how would i get it so the 24" monitors would show the true aspect of how it would look if i was sat in a plane?
