Is there a way to ROLL BACK an "update" as this latest ruined my HAT switch mode.

I don't like being FORCED to have these updates without letting me know AHEAD of time what's going to be changed.

Turn off experimental versions in 'preferences'.  That will revert back to the last stable beta.
