Just talked to tech support. They are aware of the 'missing planes' in some installations.  They are also experiencing some sort of 'outage' and do not have a ETA for restoration. Nice and vague of them:

Based on my resources, This error actually crops up on Microsoft's list of known issues with Flight Sim on Steam and MS. We can try to do some basic troubleshooting steps on it. First step is to Remove and re-add your profile. If this issue relates specifically to one profile on your Xbox One console, the profile data may be corrupted. We can correct this issue by removing your profile from the console and then downloading
 your account again.

For now we don't have a specific timeframe on when will it be fixed or when the outage started. but they're also doing their best to have it resolved as soon as possible. For now, it's much better to keep an eye on it . I'll do the same becase I'm having same issue here. xD
