When I buy and plug a yoke to my system, ( when it's not sold out ), will I still be able to use my joystick for rudder ?

Or do you really need rudder pedals ?

yes. You will just have to make sure that you clear the other axis assignments from your joystick since having axis assigned to multiple controller has been reported to give issue (rather obliviously I would say).
