Can LNM be setup with a Mapbox map and if so, how?

Not yet. I have this on the list but I need a way to add the api-key to the map addresses which are currently stored in the map description files (DGML). Here the the (very old) issue for this task: https://github.com/albar965/littlenavmap/issues/85
