Tip on setting up a practice approach "only"

You can select a navaid/fix as point of departure, just open filters and select (must be done every time unfortunately)  navaids as ON (scroll lower part). Landing runway is user pre-selected with destination as is usually done.

Then go find and  select a fix that is about 8 miles final  by clicking on the fix and selecting departure in that box

You can add other points in between to create an intercepting angle or follow a real approach sequence, just make sure the furthest point is set as departure

MSFS will assign sufficient altitude and you can take it from there
