PMDG 777-200LR Excessive Fuel Burn

I've recently been getting into long haul flying so i bought the PMDG 777-200LR Base pack. Been loving it flying some EGLL-OMDB and return flights. Today I thought id venture out a little more and try Dubai - Orlando Intl. Loaded 131700kg of fuel on board and had a ZFW of 190.6. Upon departure the aircraft predicted 20.1T of fuel upon arrival in KMCO and that was a very very comfortable margin for me. So i left the aircraft to do its thing and returned just as I was flying over Canada. Looked at the FMS and now the prediction was 0.2T of fuel remaining at KMCO. Then around 40 minutes later it went down to 0.0 and I ended up having to add fuel mid flight to be able to even get to Orlando. Bear in mind at the time of flying there is a Jetstream over the Atlantic which produced a headwind ranging from 60kts - 110kts.

How can simbrief give me a final reserves of 2.8T and the aircraft predict 20.1T upon arrival? And even after that, how come I didn't have enough fuel to make the entire flight. Surely the wind couldn't of been that much of a factor?
