Advice please, monitor choices for Mac Mini M1, XP

Newb, sorta, asking for help, poking around the forum and search engine finding some great info on monitors but not specific to my application/set-up/mission.
Machinery thus far... Mac Mini w/M1 chip and 16Gb ram, will be running X-Plane 11, looking for a good bang for the buck performance monitor for desk top flying, possibly a second monitor in the future if that enhancement brings enough value to the mission without compromising performance too much.

Mission... will fly mostly GA for practicing procedures, pattern work, etc to help w/maintaining proficiency as a Private Pilot SEL, will have yoke, pedals, and throttles, (poking about the forum for input on those currently for this machine that brings the most realistic feel on a moderate budget). This is a simple desk top set up, my son and I will also do some informal exploring/buzzing about the world as well. This machine will also be doing some photo and video editing at novice to low level amateur level, my son will dabble in MineCraft on occasion as well. 

I am considering LG 27GPL83B". Price point is good, not sure if for this price, what compromises it brings to the table with my set up, input?
