Just recently every time I use FS2020 my graphics settings are changed to what I think is default settings.

Alter them back to my options click and save next time i fire up the sim changed again happened 3 or 4 times, sometimes this happened with updates but these changes are happening without sim updates.

Changed CFG file to read only to prevent further occurrences got me thinking if the CFG file is corrupted if I delete it does the sim rebuild it on next start up?

Have FS2024 on a different drive.

Has this occurred with anyone else?

I had this problem with some settings, level of detail to name but one. Eventually, I found out if you fire the sim up, go to options and alter all the settings to your requirements. Turn off the sim without choosing an airplane and destination first. Restart sim and the settings should be fine.
