Bob Scott's post in Saitek Pro 52 X problems was marked as the answerIf the null zone on the yoke is too small, or if the pots are worn and throwing nonzero spikes, this will happen. FSX responds to the last DirectX input seen, so if the yoke is sending a stream of nonzero inputs, it'll do exactly what you're describing.
The best way I know of to stop this problem is to remove all of the axis assignments in the FSX controls dialogue, and then set aircraft-specific assignments for the control axes in FSUIPC...yoke for fixed wing, X52 for helicopter.
